cuppacakes

i am in love with cupcakes. it seems like every time i try to make any gf cakes/bread/whatev they aren't done in the middle. cupcakes have done me proud.

fruit (and frozen custard)

i got some frozen vanilla custard with strawberris and bananas. the custard was from some sort of new hotdog place by my parent's house. turns out there's nothing other than custard there that's g-f. score for me! i know you can hardly see the custard but it was just enough to be fabulous.

cupcakes

mmmm, cupcakes! i made these from a muffin mix by namaste. i used milk instead of water for the mix and they were moist and delish. i packed them up in a zippy and stashed them in the fridge along with some icing for later. they were good with breakfast plain or for dessert with the awesome icing i got from shelly! (who i miss already!)

apple strudel-y something

i use pears or apples (i don't remove the apple skins!) you can add whole cranberries as well. the fruit gets tossed with some lemon or lime and a bit of honey or maple syrup. the topping consists of oats, a little bit of flour, brown sugar and butter chunks sprinkled all over and sort of packed in around the fruit. when you check on it while it's cooking, if you see any dry oats, just poke them down into the bubbling juice or add another little chunk of butter to that spot. it's done when the top is bubbly and delightfully browned. i usually serve with cream or yogurt because i find the ice cream is too sweet. it's very good warm.

popped pudding

lemon pudding and popped corn on the stove. i think this is the next pbj. i forgot how much i love popped corn on the stove. we've been watching the wire on the recommendation of my brother jim jam. i've been taken in pretty much, but season 3 kinda was a little forced, sadly. my favorite character is omar. he's the reason i kept watching when the cheese started spewing out. i wish i was a drug dealer sometimes because they just have too much "money, money, money. must be funny... in a rich man's world."

happy happy happy birthday!

well, it's another year older for matt. i made tres leches cake and oatmeal coconut chocolate chip cookies.
why yes that is a hand knitted potholder i made, thanks for asking! and yes, my counter is super ugly, it's an apartment however, so what do you expect? a run on sentence?
PS. this was the most frustrating post to publish ever. and if it crashes again while i type this, i will be angry.
PS again. if you're wondering why we are not currently doing something birthday related... you can ask "call of duty 4"

♥day

ok so for ♥day i made meatloaf (no meat pics sadly) and apple pie. the ♥s got a little burnt on top because i got sugar on them and i should have used aluminum protection. however, they are still unbearably cute.

meatloaf = vegetarian converting. it was so good. dude.

i don't know why i need to start everything i write with ok so... but this blog will be about the things i cook for eating. they will be awesome and you will most likely want to come over for dinner. we don't have a table people so byot.
